Also, what is the best way to handle breaths? I've looked at some of the previous posts and the answers seem to vary. At this point I just edit them out because they are so obvious but in the long term this doesn't seem practical.

Hi Michael,
Loud, long breaths can be distracting but quiet short breaths shouldn't be a problem. With practice, editing becomes much quicker same as controlling breaths when reading.
This sample sounds good and has no breath issues.
